Stuffed Chicken breast with roasted vegetables(serves 2)
This recipe is an old favourite. It is so tasty and easy to make and you can experiment with different fillings to stuff the chicken breasts. I have used spinach with feta cheese and it was delicious.
2 Chicken breasts
2 pieces of stilton cheese (or alternatively feta cheese & spinach)
2 slices of bacon
Selection of big chunks of cauliflower, broccoli, sweet potato, onion, carrots etc.
Handful of chopped mixed fresh herbs (or 1 tbs dried mixed herbs)
Salt & pepper to taste.
Clean & prepare vegetables and put into plastic bag with 1 Tbs olive oil, mixed herbs plus salt & pepper and shake vigorously to coat all the veg. Place in baking tin and cover with tin foil. Bake in hot oven for 1 hour then take off tin foil and bake for another 30/40 mins until vegetables are cooked through.
Meanwhile, clean chicken breasts and slit along length to form a pocket. Put piece of stilton (or feta & spinach) inside pocket and wrap the bacon slice around the chicken breast to hold in the contents.
Place in casserole dish and bake in oven for approximately 30mins with the vegetables.
Take chickens out of the dish and thicken the juices with a teaspoon or so of cornflour mixed in milk to make a sauce.
